Chai Iced Tea
There is no end to the variations on Chai Tea. Below is one of my favorite mixes, but feel free to experiment to come up with your own perfect spice blend. Makes two servings.
1 whole cardamom pod
2 whole cloves
1 whole star anise
1/2 cinnamon stick
2 cups water
1/8 teaspoon ground black pepper
1/4 teaspoon ground dried ginger
1 cup whole milk
2 tablespoons sugar (more to taste)
1 tablespoon loose black tea
1/2 gram kief or ground hash
Lightly crush cardamom pod and place in a small saucepan along with cloves, star anise, cinnamon stick, pepper and ginger. Add water and bring to a boil over medium heat. Remove from heat, cover, and let steep for five minutes. Add milk and sugar to the pan and return to medium heat. Bring to a boil. Remove from heat and stir in tea. Cover and let steep for three to four minutes. Strain through a fine mesh strainer. Stir in kief or finely ground hash until dissolved. Fill two large tall glasses with ice. Pour tea mixture over ice and serve immediately.
